Tails: Optimising Sustainability in Bakeries through Service Design and Reusable Packaging System

How can we design sustainability responsibility into takeaway bakery food services?



Project Abstract


The Tails project reimagines bakery service models focusing on minimising food waste. The design features two sizes of reusable boxes, divisible into six flat panels, available for purchase or rent. Innovatively, bread offcuts (“bread tails”) serve as rewards, encouraging box returns and creating a shared responsibility cycle. A data visualisation system comprising four large boxes behind the counter showcases daily waste reduction. The “Tails” concept, inspired by a Norwegian study revealing 300,000 bread loaves wasted daily, particularly uneaten end pieces, transforms this significant waste into a sustainable solution. This approach redefines responsibility allocation and service processes in the baking industry, addressing a critical aspect of retail food waste.
